I'm gonna try my best to get a bottle and include it in a blind tasting the next time we can get together. I'm pretty sure this is the second time they have barrel aged old stock. The first time they did it was before it was considered the "cool" thing to do. So I give them credit for that.

Brewed 12 gallons of a belgian quad yesterday and today all 3 carboys are bubbling away. I did a little experiment with 1 carboy having 5 gallons and a huge active yeast starter. The other 2 carboys i split a yeast vial into just to see what would happen if i really put a strain on the vial of yeast. Was happy to see activity in the 2 "strained" carboys after less than 24 hours of pitching.


Stats for Scottjew: OG of 1099 in the 12 gallon batch I used an original recipe and 8 pounds of belgian sugar that I made myself.

Stats for everyone else: potential level of alcohol could be anywhere between 10-12% (will find out exactly in a month)

this is the nearest i have been to "full capacity"
i think i only have 4 carboys that are empty... hell maybe i will brew something this weekend just for shits so i can fill every last carboy up. maybe ill do a barleywine and use the second runnings to do a pale ale and use all of my homegrown hops in that

this is his second one and he douched this one up as well. The first one he threw copious amounts of hops in for no reason. This one he didn't even let me double-check his recipe and he just made it. He wanted a "double" and fell way short. Last time it was almost 9% this one is like 5.8 and he claims it was the same...lol

If your food was expensive(25+ p/h), your server gets a salary, if your food was cheap, chances are they are making 2 bucks an hour without your help.

Second of all, we have to check on your food. We know you don't like it when we do, we don't like it either, its a job contingent and I apologize.

If your server seems shitty, there are 2 possibilities. A) They are shitty B) They have 2 many tables (restuaraunt's fault clearly theirs). You can tell, if the person is sweating, they are overburdened, if they are huffing, they suck.

If you get a shitty server, tip 5%. $0 is a dick move, but makes you look like a regular cheap asshole, 5% sends a clear FUCK YOU. Yes, I am a serverfag telling you to tip poorly. The benefit to doing this is that you will make bad servers quit their jobs. This improves the industry as a whole.

If you are going to complain to a manager, be calm and collected, if you are exasperated and yelling, the manager is just going to call you a faggot under his breath when you leave. Cool and collected will actually cause change.

Stop telling serverfags to get a real job. 90% of people in waitstaff are working to pay for school. It is a shit tier job, but only to prepare for actual work. Its clearly hard, but it doesn't pay well by default. A good server has a potential to make decent money, but don't assume they all do. Pay respect with respect, and pay ignorant niggers with 30 cent tips.

Last but clearly least, this is directed at other serverfags, People who don't tip are people who don't give a fuck about other people. THIS IS THE EXACT DEMOGRAPHIC OF 4CHAN. Was shooting for the 150-155 range. Primed cooler to ~140. Came up cool so poured in some boiling water and took it up to 160, I stirred and let the lid open till it dropped below 160 and let it rest for 90 mins. Gonna get some unfermentables so we will see
