Brewed 12 gallons of a belgian quad yesterday and today all 3 carboys are bubbling away. I did a little experiment with 1 carboy having 5 gallons and a huge active yeast starter. The other 2 carboys i split a yeast vial into just to see what would happen if i really put a strain on the vial of yeast. Was happy to see activity in the 2 "strained" carboys after less than 24 hours of pitching.


Stats for Scottjew: OG of 1099 in the 12 gallon batch I used an original recipe and 8 pounds of belgian sugar that I made myself.

Stats for everyone else: potential level of alcohol could be anywhere between 10-12% (will find out exactly in a month)


Mash temp?


Was shooting for the 150-155 range. Primed cooler to ~140. Came up cool so poured in some boiling water and took it up to 160, I stirred and let the lid open till it dropped below 160 and let it rest for 90 mins. Gonna get some unfermentables so we will see


Ouch that may be very hard to attenuate to anything drinkable given the low ibus


how did you figure out my ibus without knowing what hops i put in? lol

beer update

Coalhouse homebrew night was tonight - our amber ale was very well received, went through 12 bottles of it with ease. Irish Stout was good but needs a month of bottle conditioning, there is still some sugar and yeast in it. Had a few each of Maltose Express' Celebration Ale and Schneider Wiese clones, as well as a few pints of Harpoon's Dark Dunkel on cask, pizza made with IBC's Flower Power, some other shared homebrews, and one or two on tap that I don't recall. My good friend Steve (who I have known for nearly a decade) brought a few bottles of his chocolate oatmeal stout and had some amazing feedback on it - it was quite exceptional, four years of work on it made it one of the top brews of a well known and elite variety of beer, and we had several brewers (including Harpoon's rep) comment on how good it was. Thursday we go back to try pizza with dough made with our own beer. Easily the best night I have had in a long time due to old friends, great brews, and having ~15 beers and a tab of under $10.

I opened the carboy up that has been aging my lambic brew for the past year. Over the course of the last 6 months it has went from smelling like pure vinegar to finally coming into its own and smelling like a funky mess of awesome

I ended up pitching about a teaspoon of amalyse formula into one of the 6 gallon carboys. It took a few days but it kickstarted the fermentation again so I added some to the other carboys as well. A week later the first addition carboy reached full krausen for a second time during primary. I now have big hopes for this brew.

I need to take gravities again to see where we are at but I'm thinking I got it to drop a few points like I hoped it would. I'm gonna go ahead and blend the 3 gallon carboy in with the other 2 and cold crash them for a month. While cold crashing I'm adding bourbon soaked oak to one.
