adam, the quad is light on the carb, or should i have waited?  regular one, clearly the oaked one.

yeah, the yeast completely took a shit on me
the oaked one is a step up

did you find it to be almost sickeningly sweet? eh? honest opinions pliz

meaning, no matter how much longer you waited, it wasnt going to get anymore carb

yea, its incredibly sweet, thick and syrupy. hard to really get much past that tbh. this really needed that edge taken off.

and i was wrong, only 3 homebrews. quad, oak quad, vanilla stout

Drinking canned #9, it tastes so much fresher than any bottles I ever had. First batch of cans I had tasted as fresh as 2 days out of the brewery (tapped keg for comparison), this tastes a little bit less fresh, but still great. I love the freshness of canned beer that hasn't been exposed to huge temperature changes.

i dont agree with that beer law, that sucks

how come now one complains about florida? they recently passed something that requires people on state aid to be able to pass a drug test in order to use state aid

makes me smile and wish wisconsin had that :)

There has been a ton of complaining that Rick Scott is a corrupt motherfucker, you just don't listen to the liberal media. He transferred his ownership of the largest drug-testing company in Florida to his wife.

Yeungling is awesome stuff though, I have to drive to New York to get it. When I was at school closer to the border, it would be a ~20 minute drive to get it at a supermarket and it would go on sale as low as $10/12 bottles years ago. Florida, I think the Tampa area, also has New England Brewing Co distributed - grab anything by them if you see it.

Brewing 10-12 gallons of an apricot pale ale, trying to make something between #9 and Aprihop.

It smells so good.

Nice, I'm good for about a pint or two of aprihop per year.

I brewed 10 gallons of RIS that will come out to about 10.2% abv. I'll let it sit in primary for a month then transfer it to one of my apple brandy barrels.
I assisted my friend in brewing 10 gallons of imperial American black ale

@ adam/dan:
getting a shipment together, questions

1. i have 2 abyss for dan, can i include them or do you want me to ship str8 to you dan? i ask cuz i know you 2 have gay beer sex frequently and i have to make 2 shipments to adam anyway.
2. fw abacus is in a box, which ofc does clearly fit in styrofoam container. i can take out of box or i can make separate box to ship. lmk.
3. my thoughts were to give you the few things im don8ing to the stakem beer cellar, along with the abacus and them fill the rest with the hellshire, with the balance of hellshire on the next shipment. that sound ok?
4. ohh, and where did you get that box that was a perfect fit for the container?

1. Include them, no problem. If I'm clearly mistaken I'll see him again within the next week and a half or so.
2. Take out of box, fold box and insert between stryo and outside box
3. Sounds perfect
4. I had roughly a dozen boxes in my basement from previous trades, that one happened to work perfect. I had another larger box that i was going to "pad" with dirty sock for old times sake but didnt. :P The fedex store I frequent has them as well (I think.)

ill say it was very good, the subtly was appreciated. i dont drink enough quads to really have a place for this one though. need to do more experimentation.

I didnt get them in the fridge early enough to be able to enjoy them tonight. Perhaps tomorrow.

I recently drank a barrel aged quad from struise that honest to god taste identical to mine. I would love to get some more bottles of it to do a blind tasting with some people and see if they can pick out a difference or pick one as a favorite over the other.

in all honesty, some of the stouts you have drank in the past have more bitterness than some ipas, its just a matter of different type of perceived bitterness

hoppy oil bitterness verse roasted, burnt grain bitterness

your homework for next time, snag a bottle or two of 90 minute and sit down with some pizza and tell me that isnt some fucking ofc stuff

while 90 minute is a step up in the realm of bitterness, it is balanced quite well with some malt sweetness and alcohol. if you enjoy the 60 minute, im anxious to see what you think of the 90

Going to use this poop as planning/inventory purposes for my homebrew.

Current actively fermenting brews:
Berliner Weisse (kolsch) - ready to be kegged in 3-4 weeks
Berliner Weisse (Brett/lacto) - ready in 6 weeks but might let age longer and then bottle
Russian imperial stout - leave in primary a month, transfer to apple brandy barrel
Bryans black IPA - destined to be another failure

Long term aging projects:
Belgian single with Brett/wild bugs (taste this in a month to either rack to fruit or keg)
Lambic (need to brew another batch to put on the yeast cake and age this one on raspberries)
Funked stout (needs more time and possibly an addition of molasses to let the wild yeast go crazy)

Assorted items:
Need to bottle that wine which is 2+ years old
Need to build a rack to put the brandy barrels on
Experiment with what lime zest taste like in Berliner

Future brews:
Lambic
Olde ale to be aged in brandy barrel
Belgian golden ale to be aged in brandy barrel
Belgian strong ale to be aged in brandy barrel
English barleywine to be aged in brandy barrel

I want all of these, except bryans black "ipa"

update: enjoying the ipa style

bitter, yes
totally drinkable, definitely

in all honesty, some of the stouts you have drank in the past have more bitterness than some ipas, its just a matter of different type of perceived bitterness

hoppy oil bitterness verse roasted, burnt grain bitterness

your homework for next time, snag a bottle or two of 90 minute and sit down with some pizza and tell me that isnt some fucking ofc stuff

while 90 minute is a step up in the realm of bitterness, it is balanced quite well with some malt sweetness and alcohol. if you enjoy the 60 minute, im anxious to see what you think of the 90

perhaps i shallst see your 90 minute and raise you a 120 minute imperial

jk, im clearly ready for that

actually you probably are
you like old stock ale, there isnt much of a difference between 120 and old stock
120 is overly sweet to balance out the huge alcohol level
where 90 minute is a step up the chain of bitterness from 60 minute, 120 is a shit storm of alcohol and sweetness
