Home brewing update from Saturday:
Bottled the belgian tripel that I had aged in an apple brandy barrel.
Bottled a saison
Kegged a stout that I added blackstrap molasses to
Added 10 pounds of wild fox grapes to 8-10 gallons of berliner weisse.

Finally have some carboys empty, time to brew a pumpkin ale for thanksgiving.


and to add to this since I know Dan cares...
checked in on my imperial stout that is aging in a brandy barrel for the past 2-3 months, it smells fucking amazing but the taste still needs to pick up just a bit more barrel flavoring before I am happy enough to keg and bottle the 10 gallons

When Hellshire was released and it tasted like a standard, well crafted american barleywine that was aged in bourbon barrels people got upset because it didnt taste like Jesus' tears.


I looked through the reviews and of course it is the usual suspects being a bunch of assholes and crushing their scores as F's when that brew is fucking far from even a C rated beer. Half of these people who reviewed the beer probably only had a thimble sized pour shared from 1 bottle that was split between 50 people. Behold the power of tickers and hypers.

I am having a hard time seeing someone pour away nearly 1 out of every 3 beers purchased. My last drainpour was scotch barrel aged mikkeller black hole. It tasted like straight alcohol mixed with bandaids, smoke and plastic. It was pretty bad but I still drank 5 or so ounces of it and tried to like it or find some enjoyment out of it other than laughing and seeing someone else's facial expression when they tried it.

Prior to that, I had one weekend where I drank about 7 different things and 2 of them got dumped because the dickbag who sent me the beer sent me pale ales that were clearly only infected but 5 months past their best by date.

to date ive poored an abyss, a rochefort 10 that nearly exploded upon opening and upon poring the remaining half bottle it turned to strait foam. after 20 minutes i had an inch of beer and still a full glass of head. was clearly infected.

pored the first imperial stout trooper dan sent me, similar circumstances. i think those 3 are my only real drain pores, and all due to infection. i cant remember any others.

was the stout trooper drain pour the barrel aged version? I just opened one the other day and thought it was way over carbed but overall very well made and clearly infected

yes, barrel aged from dan, first one he sent me. the taste was literally 90% carb. maybe a touch of barrel and nothing else. was really undrinkable. though in hindsight i question if it was drinkable or if it was just clearly good at all and i didnt want to have to drink carb. that could just be me clearly liking when carb is the #1 flavor. i likened it to when you would get a fountain soda and the syrup runs out.

the rochefort... to date the most lol wtf moment. there was so much yeast. is it possible i got like a case worth of yeast in one bottle? there was a layer coated to the bottom and then the shit i could see floating.

im honestly underwhelmed for the first time from sn. but its the style, i dont find browns to be the most flavorful beers in general, but i had wanted to try this for some time.

I know exactly what you mean but I wasn't underwhelmed by it. I thought it was a solid brown ale. Granted, I haven't had this years yet but I purchased a case last year and to me, it tasted like autumn in a glass. There was a certain almost vegetative flavor to it like leaves and caramel.

It is something that I used to cook quite a bit with. Proelbay the best thing I made with it was a 4 cheese soup, outstanding stuff.

im honestly underwhelmed for the first time from sn.  but its the style, i dont find browns to be the most flavorful beers in general, but i had wanted to try this for some time.


I know exactly what you mean but I wasn't underwhelmed by it. I thought it was a solid brown ale. Granted, I haven't had this years yet but I purchased a case last year and to me, it tasted like autumn in a glass. There was a certain almost vegetative flavor to it like leaves and caramel.

It is something that I used to cook quite a bit with. Proelbay the best thing I made with it was a 4 cheese soup, outstanding stuff.


ohh, its clearly bad by any means, its a good brown. i guess if i was raking leaves after lunch on a sunday i would love this. i just got it at the wrong time.


on number 3 now, and its growing on me. ive been on a total ipa craze for the last 1-2 months and this is the first subtle beer ive really had, but its certainly growing on me.

What do you currently have bottled or in the works?

I'm brewing a pumpkin ale tomorrow that probably won't be drinkable until close to thanksgiving

Current bottled offerings are:
Imperial stout
Belgian quad
Farmhouse blend saison
Tripel aged in apple brandy barrel

I have another imperial stout and an old ale that's aging in apple brandy barrels that will get bottled in the next couple of weeks.

On draft/kegged I have many differed versions of Berliner weisse, imperial black ipa and some other things that probably will kick upon the next tapping of a pint. I could send a growler of something I have on tap if that interests you.

I'm torn about what to do with several sours/wilds I have made that are ready. In a way I'd like to bottle them to see how they develop with age but I'm out of bottles since I bottled 6 cases last weekend. Also, if probably have to pitch fresh yeast to bottle since some of these sours are a couple years on the making
