It took 10 hours but I brewed 3 different beers yesterday.
Instead of Nugget, I did a galaxy hoppy wheat along with the zythos.
Also ended up brewing 8 gallons of the saison instead of 5.

I have to update that recipe. It's close but at the last minute I dropped to less pilsner and more wheat. Also, I had more citra than I thought I had so I bumped up the quantity of late addition hops. I don't know how available the French saison yeast is for you. It's sold out all the time when I try to buy it. A good substitute would be the new American farmhouse blend. It has a bit of Brett added to it that makes it finish super dry which is awesome for the style.

they are trying hard to be recognized at craft again, some of their styles have greatly improved over the last couple of years. when they partnered up with budweiser they essentially stopped focusing on making unique beers and just became bland average "micro brew".

their kgb is outstanding though imo

Saison Lente is pretty fantastic as well.

I am really impressed with what I have had from them this year that were new offerings. Sour in the Rye is the closest thing I have had to an american made geuze to date. The only thing I didnt care for so far was Mother Funker which is too sour (did I actually say that?)

its perfect, dangerously drinkable. maybe i overstepped my description just a bit. its slightly thicker but still medium or lighter bodied but has a certain smoothness about it

You are going from brew to bottle in a week? I dont think I would trust any yeast strain except for maybe saison to do that kind of job that quick especially since your yeast was a year old...
