Considering buying pieces and making a comp to last for quite awhile now that I have a job again

Basically so I will be able to play games without issue for the next few years

Reccomendations/suggestions

And I am possibly volunteering stakem to assemble it in return for beer

I think you need to seriously consult with bobdavebob and have him instruct you on the things you need to take into consideration before investing $9,000 into a paperweight

clearly sure, depends on how much it would cost to build something that would last that long in the world of computers

5 years is a good approximation in terms of being out of date, 8 or 10 for "clearly taking a shit", on a modest budget

6 core processors are xeons which are workstation processors, clearly personal computers

if you want your ram to run triple channel you need a multiple of 3 sticks of ram, you can do that if you want, but you will have 12gb ram instead of 16gb, since 8gb sticks are way too expensive
