I know you are a mead/melomel kinda guy. But do you have much experience with wine?

I've done a couple batches to make the wife happy ~2 or so years ago. And today I've run into my first hiccup. I've pretty much made 10 gallons of fucking pink rocket fuel. If my hydrometer readings are right, it clocks in at 18% alcohol. It's solvent as fuck. It's almost like drinking cheap vodka. I'm sure it would work well if used as something you blend into mixed drinks.

I'm thinking about putting 6 gallons of it back into the cellar for another year and adding 2oz of oak cubes. The other 4 gallons im at a loss. I'm thinking back sweetening it isn't gonna hide that huge alcohol but it will make it easier to drink. What are your thoughts? Blend it? Sweeten it? Take it for what it is?

FYI: I have no notes about these batches to be able to state what yeast was used.

Well tbh mead is just a more finicky version of wine because of lack of nutrients you begin with in your must

What did you make it out of, grapes?

The best comparison I can give you is cheap vodka is how it smells and tastes.

Yeah clearly surprised at 18% although I would have expected it to be a bit subdued. Back sweetening with a gallon of high gravity must would probably be the way I would go with it. I cant really think of any wines that big in terms of abv that dont have a large FG backbone to subdue the alcohol.

Also I meant subdued due to the length of again. I have had wines that were awful similar albeit lower alcohol content that have come around after a year + in

I think I'm gonna bulk age 6 gallons of it on an ounce or two of oak cubes for another year. The other 4 gallons I'm going to partially blend with the batch that is 2 years old and if there is any left over, with the stuff I'll be making this year.
