Do you prefer to use wooden cutting boards or the plastic ones when preparing food?

And any benefits to using 1 over the other, since you are a chef?

I'm clearly Scotty2Cool4Drugs but I firmly believe in the use of the most porous material possible in order to increase the amount of bacteria that takes up residency just below the surface of the food you are about to cut.

ĦBon Appetit!

you really don't want to cut raw meat on a wooden cutting board, but other than that i mostly just use whatever is clean

in professional kitchens it's mostly all plastic cutting boards

Anyone with a brain knows that a BPA is an organic compound with two phenol functional groups. It is used to make polycarbonate plastic and epoxy resins, along with other applications, obviously.
