8/8 Savage Saronite

I would like to finish up, or at least get a few things done tomorrow night.

What type of enchants do I need? Also, can I just use random Jewelery & Trinkets until I get my nice Honor ones?

for enchants there is the wintergrasp head enchant for 30 or so stone keeper shards
resilience to chest
icewalker or fortitude to boots
attack pwoer to bracers
not sure what else for other slots, you can always just buy the +12 stam leatherworking kits and put them on whatever temporarily

use whatever trinkets you have until you get a horde trinket which removes fear/stun/etc, 2 minute cooldown is preferable, the more honor you spend on the trinket the more resilience you will get, up to 84 resil @ 50k honor

you can JC the pvp ring when you get up there "savage titanium ring"
