I'd recommend MAC Knives if cost isn't really an issue. Don't buy a whole set either, all you really need is a chef's knife, a santoku (least necessary, but my favorite to use), a break knife (serrated), and a smaller paring knife for more delicate cuts. Also get a honing steel (that long rod that people think is a "sharpener").

Also how are your knife skills? Do you bear claw/speed cut?

Yea I know I need honing steel but I have clearly had anything worth using it on. Yea thats what I was thinking as far types of knives goes.

I would say they are poor at this point, but I would ofc like to improve. I should look into a class....

What the honing steel does is straighten the blade, the sides get curved after some use, so it should be honed after each use.

Yup, any particular place or brand of honing steel or it is pretty generic?
