and if i ever find myself clearly being lazy id say check cascade brewery, but that is a must to drive to portland. upright 4,5,6,7 i can get across town. love i need to go to portland.

they dont distribute much, but make amazing sours

I can send you entire yeast cakes of wild bugs if you really want it. I'm doing some down-sizing of inventory and have a lot of pedio/lacto/brett.

I've done over a dozen wild/sours and honestly the most remarkable one I've done has been 100% fermented with stepped up dregs from a bottle of Oude Geuze de Cam. I'm a brew or 2 away from innoculating my oak brandy barrels for 3-stage sour aging/blending.

As long as you have documented where it is from then for sure. I also do want to drink the beer ;)

I have everything documented but I don't know how that is valid. We are talking about yeast that has gone through several generations of usage and has been mutated to at least some degree outside of what you would of had at the brewery.

Also, if you are tryin to achieve something as complex as RR "ation" sours, you need to have individual strains and innoculating the wort in steps. They don't just pitch and age... Well, except for Beatification, I think that one is 100% spontaneous fermentation from whatever is residing in the previously used barrels.

Primary with a known yeast strain then pitch bugs later. Sometimes add fruit, sometimes just ferment with bugs. I get what you are saying and my plan is clearly just a simple of pitching bugs etc. I just want to have an idea what bugs I am pitching
